About me:
I am a retired young 47 yr old. Now retired due to carpal tunnel, I am working on a Down Home with Love Cookbook for my family and friends for Christmas for 2006. The cookbook keeps my hands moving and me busy. I checked out over 150 books from the Denver Library System for recipes, then discovered the wonderful world of Recipes Online. I have many sites but Allrecipes I just discovered and am excited to get lost in the recipe sections. I have been cooking since I was 8 yrs old and in 4-H Club. My highest ribbon was Reserve Grand Champion for an Angel Food Cake when I was 11. I love cooking for people, but cooking for myself is a drag, so even on my tight budget, I'll whip up dishes to take to every event I am invited to. I come from German grandmothers and was a sponge around them learning all I could.

Kimberly's Meaty Meatloaf

This was my first attempt at making a meatloaf and this is a great starter recipe. I did a few different things, and it was wonderful. I put an 8 ounce can of tomato sauce INTO the meatloaf mix, then poured one on top at the end (this was all by mistake, but it really turned out awesome). I also shredded the onion and a few cloves of garlic into the mix as well. Instead of the egg I used an egg substitute and it all worked out fine. Again, this is a wonderful starter recipe, you can really do a lot off this meatloaf base.

This is a great recipe. Do not allow it to boil though after it has baked as it will curdle the cheese and look terrible.
